We have been learning how to use bakery equipment - especially the two big ovens and electric mixer - and now make products that we can sell in school and, during the tourist season, at Bang Niang's Saturday afternoon market.

It does not make a lot of money yet but it does help with our expenses and it means we can bake for our own consumption. It is also improving our skills in baking, selling and managing the project.

We had lots of disasters with our first efforts but we have learnt - we were lucky enough to have a French baker stay with us as a volunteer and he showed us how to get good results.

Now we can make:

Bread: white loaves, stick bread, garlic bread ... and many others

Muffins: Various flavours and types

Cookies: Butter, fruit, chocolate

Cakes: Fruit (raisins, strawberries and tropical fruits like jackfruit), butter, chocolate and others.

Pizzas: Everyone's favourite!

We are always expanding and adapting but the problem is selling. We have a market with foreign tourists during the season but after that it is more difficult to sell.

Our coffee area is open all the time and we hope some people will call in for coffee and buy our bakery items too.
